Sophie in the souk, Pixelle's new eight-part TV series is complete, April 2009

TV chef Sophie Grigson returns to the screen in a quirky new doc for The Travel Channel, which sees her this time in North Africa in search of exotic Moroccan flavours – while Momo serves up the score.

Airing in May, the show is a tasty trip around the sumptuous cooking secrets of a country that fuses the cultural flavours of Africa, the Middle East and Europe, as Sophie and fellow cooking chum Khalil take in the sights and smells of markets, mountains, kasbahs and courtyards.

A lively drive from medina of Marakech to the horizon of the Sahara, Sophie in the souk naturally demanded a big tagine of tunes. But Tim from Momo:tempo was ready for the challenge.

"The challenge wasn't so much coming up with an oriental vibe, but trying to be clear about what marks out Morocco from the rest of the Arab world, musically" he says. "And the main thing, in the broadest possible terms, is the blending of Berber and African traditions with Middle Eastern. It's a country of deeply rich musical heritage in so many different ways."

"Of course, I was doing it in Bournemouth, so you get none of that." he adds. "Well, not explicitly."

"It's more a sort of groovy, kitch collection of tourist oriental," Tim says, "but it's bang on for the show. We steal some traditional flavours and mash them into some contemporary influences – which, in attitude at least, is very Moroccan."
